Ingredients
  • 1 tbsp garlic
  • 1/4 cup shallots or onions
  • 2 cups sugar pumpkin
  • 2 cups delicata Squash
  • 2 cups kale or spinach
Directions

Preparation: Mince garlic, shallots or onions.  Dice or cube pumpkin and squash. Save seeds for roasting or growing next season. 

Instructions:

  • Heat 2-3 tablespoons of olive oil, add garlic and onions (2-minutes)
  • Add pumpkins & delicata squash (8-minutes), add any preferred spices *optional= minced ginger and/or red chili flakes
  • Add any other protein (chicken, fish, shrimp, tofu or beef) -8-minutes 
  • Add curry sauce or coconut milk + curry powder 
  • Stir well, make sure all ingredients are immersed in sauce; add 3-teaspoon of lemon juice or orange juice 
  • Simmer in low heat for 10-minutes 
  • Turn off heat- add kale or spinach. Stir, cover and let sit for 5-7 minutes. 
  • Serve over bed of rice
